Turner's Tortilla Soup


Tonight I made tortilla soup. I love Mexican food, especially cilantro. To make this soup you need: 
Olive oil for the soup pot
1/2 an onion
A few cloves of garlic
2 cans of rinsed beans (I used black beans and pinto beans)
About 2 cups of frozen corn
2 chopped up pre-cooked chicken breasts
1 1/2 boxes of chicken stock
2 cans diced tomatoes
Large spoonful of tomato paste
2 limes (plus more for garnish)
Handful of chopped cilantro (plus more for garnish)
Salt 
Pepper
Oregano
Cumin
Chili powder

First chop your onion and garlic (I used a garlic press). Heat oil in the soup pot over medium high heat, and then add the onion and garlic. Rinse beans and add to the pot. Then add chicken, salt, pepper, cumin, chili powder, and oregano. Stir and then add chicken broth, tomatoes and tomato paste. Add limes to taste. 




Serve with shredded cheese, sour cream, cilantro, limes, and chips!

Lots of Life Happens!

I'm not really sure why I took such a long break from posting here, but I did. 

And a whole lot of life happened: like deployments, moving, and a few new family members! 

There has been too much school to catch you up on, but most (all four of you) know what we've been up to at any rate. I'll start updating from here and keep you updated as best I can! 

We started our new school year and have attempted at schooling year 'round for the past year -although there were some pretty large breaks.

The boys are all going to start contributing to this blog in different ways. Deacon and Eli are going to dictate a little about anything they feel is relevant and Turner is going to start typing a short story a week. Once we get an iPad, this process will be smoother!
